- Ingredients
- 2 cups kidney beans
- 1 1/2 cups quinoa (instead of rice)
- 1 1/2 cups okra (sliced)
- 1 onion (chopped)
- 1 green bell pepper (chopped)
- Mixed bell peppers (non-green & chopped)
- 4 stalks celery (chopped)
- 3 tomatoes (chopped)
- 1 zucchini squash (chopped)
- Salt / pepper/ crushed red pepper / cayenne pepper / italian seasoning (didn't have cajun seasoning so made a substitution on the fly)
- Preparation/Cooking
- Start cooking beans in cooker and the quinoa in a separate pot of water
- Cook onion until transparent then add veggies. Cook on warm for a few minutes then add seasoning
- By the time the veggies are cooked, the beans should be done so add them to the veggies and put the stove on simmer.
- When the quinoa is done, add it to the veggies/beans & continue to let simmer until all is evenly cooked
- Makes about 6-8 servings
