Vegetarian Gumbo Recipe


  • Ingredients
    • 2 cups kidney beans
    • 1 1/2 cups quinoa (instead of rice)
    • 1 1/2 cups okra (sliced)
    • 1 onion (chopped)
    • 1 green bell pepper (chopped)
    • Mixed bell peppers (non-green & chopped)
    • 4 stalks celery (chopped)
    • 3 tomatoes (chopped)
    • 1 zucchini squash (chopped)
    • Salt / pepper/ crushed red pepper / cayenne pepper / italian seasoning (didn't have cajun seasoning so made a substitution on the fly)
  • Preparation/Cooking
    • Start cooking beans in cooker and the quinoa in a separate pot of water
    • Cook onion until transparent then add veggies. Cook on warm for a few minutes then add seasoning
    • By the time the veggies are cooked, the beans should be done so add them to the veggies and put the stove on simmer.
    • When the quinoa is done, add it to the veggies/beans & continue to let simmer until all is evenly cooked
    • Makes about 6-8 servings
