Spicy Black Bean Soup



  • Ingredients
    • 1 cup black beans
    • 1 onion
    • 4 tomatoes
    • 4 stalks celery
    • 1 squash
    • 2 carrots
    • 1/2 bell pepper
    • 1/2lb spinach
    • 1 jalapeno or 1/4cup chili flakes
    • 4-5 cups water
    • 1tbsp olive oil
  • Preparation
    • Wash and start cooking beans in olive oil and water
    • While beans are cooking, cut or chop all vegetables
    • When beans are soft, add onion, celery and carrots
    • Once soft, add remaining vegetables and chilli flakes/jalapeno along with salt, pepper, chili flakes/jalapeno and ginger to taste
    • Let cook until soft then simmer until water is bubbling
  • Makes 5-6 servings
