Chopped Vegetable Scrambled Eggs

  • Ingredients (chopped)
    • 1/2 tomato
    • 1/8 onion
    • 1/8 squash
    • 1/8 bell pepper
    • 3 olives (kalamata used but any work)
    • 1/2 avocado
  • Preparation
    • Cook vegetables in pan with salt, pepper and garlic to taste
    • When ready, add eggs and scramble until cooked
