Spicy Black Bean and Vegetable Soup

  • Ingredients
    • 1 tbsp olive oil
    • 1-2 tsp salt, black pepper, oregano and basil
    • 1/2 cup black beans
    • 1 jalapeno or 1-2 tbsp chili flakes
    • 1/2-1 onion
    • 1 medium/large broccoli
    • 1 medium/large bell pepper
    • 1 medium/large zucchini squash
    • 2 sticks celery
    • 2 carrots
    • 2 tomatoes
    • 2-3 cups spinach
  • Preparation
    1. Cook black beans in pressure cooker
    2. Chop onions/carrots/celery and cook on medium heat in a large pot (as you stir, add seasons as the ingredients get soft)
    3. Chop/cut broccoli/tomatoes/squash/bell pepper, add to pot and stir (As you stir, add your spice factor as the new ingredients soften and stir
    4. Cut/dice spinach and add to pot then stir again
    5. Once all vegetables have softened and the water is boiling, add your black beans
    6. Lower heat to low/medium and continue to stir until ready (add additional water if needed)
