Spicy Black Bean and Vegetable Soup
- Ingredients
- 1 tbsp olive oil
- 1-2 tsp salt, black pepper, oregano and basil
- 1/2 cup black beans
- 1 jalapeno or 1-2 tbsp chili flakes
- 1/2-1 onion
- 1 medium/large broccoli
- 1 medium/large bell pepper
- 1 medium/large zucchini squash
- 2 sticks celery
- 2 carrots
- 2 tomatoes
- 2-3 cups spinach
- Preparation
- Cook black beans in pressure cooker
- Chop onions/carrots/celery and cook on medium heat in a large pot (as you stir, add seasons as the ingredients get soft)
- Chop/cut broccoli/tomatoes/squash/bell pepper, add to pot and stir (As you stir, add your spice factor as the new ingredients soften and stir)
- Cut/dice spinach and add to pot then stir again
- Once all vegetables have softened and the water is boiling, add your black beans
- Lower heat to low/medium and continue to stir until ready (add additional water if needed)
